Weekly Meal Plan / 12-21-15

Scott and I have gotten into a pretty good rhythm of cooking, and because I’m still in school and he’s busy with work, we have been doing a lot of quick meals, one dish meals, and crockpot meals. We make it a priority to cook at home essentially every day, because we don’t have lots of extra money to eat out, and it’s easier for us to eat healthy when cooking at home.

I wanted to start posting my weekly meal plans to help all you busy people out there come up with easy and delicious meals that don’t take a lot of time. I’m going to work on  posting our recipes and adding links, but for now, just let me know if something piques your interest. 🙂


monday – southwest cheesy chicken casserole (one dish)
tuesday – bbq chicken sandwiches and green beans (crockpot)
wednesday – baked chicken, skillet potatoes, and green beans
thursday – bowties with hot sausage and peppers (one dish)
(friday – christmas dinner at mom and dad’s)
saturday – chicken alfredo and broccoli
(sunday – family get together at grandma’s)

Recipe / Crockpot Hot Chocolate

Ok everyone, prepare yourselves, because I have been told that this recipe is life-changing. I made it last week for a Christmas party for some friends and family, and it was received very well. Crockpot hot chocolate is perfect for family get togethers or Christmas morning because it’s fast and easy to put together, and it’s a great way to serve a lot of people (not to mention, it’s delicious!) The cinnamon and cayenne pepper make this hot chocolate  special by adding some spice, and the chocolate chips, half and half, and sweetened condensed milk make it super rich and creamy.


CROCKPOT HOT CHOCOLATE
serves 8-10

ingredients:
1/2 gallon (8 cups) milk (i used 2%)
2 cups half and half
1 can (14 oz) sweetened condensed milk
1 tsp vanilla extract
2 cups chocolate chips (i used half milk chocolate and half semi-sweet)
2 cinnamon sticks
a pinch of cayenne pepper (exclude if you don’t want it to be spicy)

instructions:
add all ingredients to a crockpot and cook on high for 1 1/2-2 hours, or until all chocolate chips are melted. if it isn’t sweet enough for your liking, add a little sugar (1-2 tablespoons). turn crockpot to warm and ladle into mugs. serve with marshmallows, whipped cream, or without toppings (it’s delicious either way!)
