Weekly Meal Plan (and Recipe) / 01-04-15

I start school back up this week, so there are a lot of quick and easy meals planned for this week! My schedule is a little different this semester (I start and finish class earlier in the day), so it might take a little while to get settled into the new schedule, but it should be good to get home earlier! I HATE when I get home from school and it’s already dark – it’s the worst. I also have a little bit of a lighter schedule this semester, which should hopefully mean I get some more time to do things other than study – but I’m working on an honors thesis so that’ll probably suck up all of my free time. It’s crazy to be looking ahead to 16 weeks from now when I’ll be done with school (although grad school is still a possibility at this point)! Anyways, I digress. Here’s our meal plan for this week!


Meal Plan – Week of 1/4/15

monday – honey sesame chicken
tuesday – caribbean jerk baked chicken (see below for recipe!)
wednesday – stir fry
thursday – stew meat and noodles
friday – southwest casserole
saturday – mom’s birthday dinner
sunday – white chicken chili


Carribean Jerk Baked Chicken

I also wanted to include a quick recipe for the caribbean jerk baked chicken, since it’s super easy and delicious! I just take 2 small boneless/skinless chicken breasts, brush on olive oil or butter, then top with a generous amount of caribbean jerk seasoning. We got ours while in St. Maarten, but we also have this one* and it’s good too! We bake ours in the oven for around 35-45 minutes at 350ºF or until the internal temperature is at 165ºF or above.

We typically serve this meal with potatoes or green beans, and this meal also works really well with Southwest* or Cajun seasoning if that’s more your style! A quick tip for getting juicer chicken – cover with a piece of parchment paper! It helps seal everything in and makes this meal extra delicious.
