Lately / Meal Plan

These past few weeks since finishing school have been busy! I have about 1000 things that I figured I’d just save until after school, so I have a lot of things that I’ve been catching up on. Scott and I have also recently begun looking at houses! We’re pretty excited about the prospect of buying a house, but since we have lots of time to buy and a relatively small budget, we’re able to be pretty picky (which is good, because most of the houses in our price range are a total mess). In all likelihood, we’ll wait until at least next year to buy, but we’ll see! It’s been really fun getting to look and imagine what it’ll be like to own someday.

I graduated this month! Pro tip for anyone who’s graduating – it’s so nice to take some graduation pictures ahead of time! Once I got all my regalia, I had Scott take some nice portraits and I sent them to family members who wanted a picture, so I didn’t have to try to find a spot to take pictures after the ceremony (it was dark and so crowded).

Scott and I took a trip into the woods and stayed in a cabin a few days last week. It was a really nice way to relax and recharge, and we got to do some fun things like hiking, picnicking, and eating s’mores!

Lazy Saturday mornings mean breakfast in bed. I love breakfast things that are really quick and easy and that don’t require cooking (we don’t have a dishwasher and I don’t like adding lots of extra dishes just from breakfast). Fruit, cereal, kefir (a smoothie-like probiotic drink), and coffee make for an easy and delicious breakfast.

This Week / Meal Plan

Confession: not all these pictures are actually from this week, since most of what I’ve been doing for the past several weeks is studying. (Unless you wanted to see a lot of pictures of my computer, notes, and coffee, it wouldn’t be too exciting.) Graduation is coming up at the end of this week, and I’m really excited to get started with a regular schedule and hopefully have a bit more free time to work on some fun projects (and this blog)! Here’s what we’ve been up to and what we’re cooking this week.

We recently went to a French bakery in the city that we’ve been hearing about for awhile and it totally exceeded our expectations! We’ve been missing French pastries since our honeymoon in Saint Marten and were so excited to find an awesome traditional French bakery so close to home!

My brother gave me his old espresso machine when he got a new one, and I’ve been using it almost every day. My coffee cart keeps getting rearranged as I gather more and more ways to make coffee, so it’s looking like I’m going to have to clean it out and reorganize soon!

I have a new makeup obsession, and it’s Root. They make all-natural, organic, and vegan makeup that’s high quality and actually affordable! I’ve ordered a few things from them and I’m always impressed. I have a long list of things I want to try, but some of my favorites so far are their Pretty Booster + Pearl Powder foundation, their Holland eyeshadow, and their Campbell Pretty Balm. I’m thinking of posting a full review sometime so I can share a little more, but for now I’ll just say that I highly recommend their products!

Meal Plan / Week of 03-14-16

Hello friends! I am back blogging again after several totally crazy weeks of tests! I just finished my spring break and I’m feeling refreshed and ready to take on the last few weeks of college. Some of Scott’s family came over for dinner yesterday and we made one of our favorite dishes, a southwest casserole (filled with delicious things like chicken, black beans, corn, and cheese) – recipe for that should be coming soon! I also have the easiest fruit dump cake recipe coming up, so be on the lookout for that too! (I just have so many recipes that I want to share with you all that it’s tough to keep up.)

I’ve really been enjoying the warm weather we’ve been having already – it actually feels like spring, which is pretty unusual for western PA this early in the year. I love the warm weather and the ability to spend lots of time outside, so I’ve been very happy about it! Here’s our meal plan for the week.
