Sorry I’ve been a little bit MIA the past week or so – I’ve been a little caught up in the crazy amount of work I already have this semester. (It’s seriously crazy – can’t wait to graduate in just over 3 months wahoo!) Scott was gone most of last week for a business trip, and I actually visited my mom, so we didn’t end up doing very much cooking. Although, we aren’t doing too much real cooking this week either. (It’s one of those weeks where I’m mad craving junk food, and every one of our meals this week takes less than an hour start to finish.) I’ve been working on some really fun blog posts for the next few weeks, and I have been writing a lot to make sure I can keep up when school actually gets pretty intense, so I’m excited to share some of that with you in the next weeks and months!
Meal Plan – Week of 1/18/16
- monday – date night at chick-fil-a
- tuesday – baked chicken + green beans + potatoes (you can even cook them all in the oven at once – I used cajun seasoning and paprika on the chicken + potatoes)
- wednesday – sausage with pasta and peppers (recipe coming soon)
- thursday – taquitos + rice + black beans (super easy – use lots of black beans and only a few taquitos to make it relatively healthy)
- friday – stir fry
- saturday – lemon chicken + broccoli
- sunday – pizza
