This Week / Meal Plan

Starting this week, I’m going to be sharing a few photos from the past week along with my current meal plan. This way, I’ll get to do a quick recap of the week and hopefully make the meal plan posts a little more interesting!

I’ve been loving this warm weather! There are quite a few magnolia trees in our little neighborhood, and they’ve all bloomed beautifully (I’m hoping the snow today hasn’t killed all the flowers). One of my favorite things to do when it’s warm is to take a quick walk around the neighborhood with Scott, and I’ve been loving how often we’ve been able to do that already this year.

Scott and I went on a fun date to Cheesecake Factory this week and we saw this beautiful sunset on the way home.

Scott was away this Saturday at a Spikeball tournament, and I ended up getting to go out to brunch with my mom and sister. We went to one of our favorite diners (Ritter’s, which is a Greek diner and so good), and I had this awesome spinach and feta omelette.

We’re really looking forward to Easter this coming week! We have some great family time scheduled, Scott’s playing drums for the Easter services at our church, and it’s a nice and easy week of school for me. We’re planning on relaxing, and we’re looking forward to enjoying some Easter dinner(s) over the weekend.

Valentine’s Day has always been one of my favorite holidays, even when I was single (surprising, right?). It’s a great excuse to dress up, send a little extra love, and eat some candy. (I’m always down for all of those things.) This year will be Scott’s and my first Valentine’s Day as a married couple, so I’ve been looking at a ton of Valentine’s Day cards to find the perfect one to give to him.

Recipe / Cheesy Carrot and Chicken Soup

Recipe for Cheesy Carrot and Chicken Soup

I found this recipe several years ago on a can of Kirkland canned chicken, and it’s become one of my favorite soups. It’s surprisingly hearty, cheesy, and it’s a lot different than your average chicken soup recipe! Seriously guys, this stuff is GOOD. It’s perfect for a cold day, but definitely still delicious during the summer.

Cheesy Carrot and Chicken Soup – Serves 4

  • 1 cup shredded carrot (I just use my box grater, but you can also buy shredded carrot in the salad aisle)
  • 3 tbsp butter
  • 1/4 cup minced onion
  • 1/4 cup flour
  • 2 cups milk
  • 10 oz chicken broth (can use canned chicken broth, but I use better than bullion which is awesome and you have to buy way less often)
  • 1/2 tsp worchestershire sauce
  • dash of ground black pepper
  • 1 cup shredded cheddar cheese
  • 3/4 to 1 pound shredded chicken (or 1 large can of canned chicken)

In a medium saucepan, melt butter, then cook the onion and carrot together for around 10 minutes or until tender (the carrots will start looking limp and the onions will be translucent).

Recipe for Cheesy Carrot and Chicken Soup

Stir in the flour, then slowly add milk, broth, worchestershire sauce, and pepper, cooking and stirring until the soup is thick and bubbly. (This will take around 5-10 minutes.)

Stir in chicken and cheese, then cook and stir over low heat until all the cheese is melted. Serve and enjoy!
